In seinem Fermentationsgrad liegt der Gelbe Tee zwischen dem Wei\u00dfen und dem Gr\u00fcnen Tee (mit ca. 20% Oxidationsgrad). Seinen Namen verdankt der Gelbe Tee einerseits seiner strohfarbenen Farbe beim Aufguss und andererseits seiner Verbindung zum chinesischen Kaiserhaus. Der Gelbe Tee war zu jener Zeit aufgrund seiner Rarit\u00e4t ausschlie\u00dflich dem Kaiser vorbehalten. Die Ernte beginnt zeitig im Fr\u00fchjahr, wobei die noch geschlossenen Knospen der Pflanze per Hand gepfl\u00fcckt werden. Nach der Ernte werden die Knospen zun\u00e4chst liegen gelassen, um leicht zu verwelken. Die Herstellung ist fast identisch wie die des Gr\u00fcnen Tees, jedoch gibt es einen entscheidenden zus\u00e4tzlichen Schritt: Die Teebl\u00e4tter werden nach dem Erhitzen, nicht sofort weiterverarbeitet, sondern in einem speziellen Tuch eingewickelt und in eine Ruhephase gebracht. Dieser Vorgang des Erhitzens und Ruhenlassens wird \u00fcber einen Zeitraum von drei Tagen wiederholt. Dadurch entsteht eine sanfte Fermentierung, die man \u201egelbe Versiegelung\u201c nennt. Da die Herstellung schwierig und zeitintensiv ist, wurde Gelber Tee fr\u00fcher in erster Linie von den Einheimischen konsumiert. Er ist reich an Polyphenolen und Antioxidantien und Vitaminen. Daher sch\u00fctzt er den K\u00f6rper vor freien Radikalen. Durch seine aufw\u00e4ndige Herstellung hat Gelber Tee keine gr\u00fcnen, grasigen Geschmacksnoten mehr. Sein Aroma ist eher s\u00fc\u00dflich und kann feine Noten von Fr\u00fcchten aufweisen, wie zum Beispiel Mango oder Papaya und sogar nussig-malzige Noten entfalten. Die Farbt\u00f6ne des Aufgusses sind gold-gelb bis honigfarben. Optimal zubereitet wird der Gelbe Tee bei weniger als 80 Grad Wassertemperatur und einer Ziehzeit von zwei bis drei Minuten.
