Sie erfordert viel Erfahrung und Wissen der Teemeister. Oolong kann bis zu viermal im Jahr geerntet werden, wobei die besten Qualit\u00e4ten im Fr\u00fchjahr und Sp\u00e4therbst entstehen. Die Ernte der Teepflanzen erfolgt ausschlie\u00dflich per Hand. Hierbei werden anders als bei anderen Teesorten die gr\u00f6\u00dferen Bl\u00e4tter verwendet. Zun\u00e4chst m\u00fcssen diese f\u00fcr einige Stunden in der Sonne leicht welken, bevor sie anschlie\u00dfend in einen Raum zur Ruhe gelegt werden, wo die Oxidation der Teebl\u00e4tter beginnt. Der darauffolgende Prozess unterscheidet den Oolong vom Schwarzen Tee: Die Teebl\u00e4tter werden anders als beim Schwarztee nicht zerrissen, sondern mehrmals gequetscht, gesch\u00fcttelt und in Trommeln gedreht. Die Dauer und H\u00e4ufigkeit dieser Arbeitsschritte bestimmt den Oxidationsgrad des Oolongs. Ist dieser erreicht, wird der Tee erhitzt, um die Fermentation zu stoppen. Als n\u00e4chstes wird der Tee per Hand oder in Maschinen gerollt.
