Bei seiner Herstellung und Lagerung sind Mikroorganismen t\u00e4tig, die die Teebl\u00e4tter mithilfe ihrer Stoffwechselprozesse ver\u00e4ndern. Dieser Prozess mildert die Bitter- und Gerbstoffe im Teeblatt, sodass der Pu Erh Tee ein s\u00fc\u00dflich-liebliches Aroma erh\u00e4lt. Diese beiden Bezeichnungen weisen auf die Art der Lagerung hin: Die traditionelle Langzeitreifung oder die k\u00fcnstliche Reifung mithilfe von Maschinen. Die k\u00fcnstliche Reifung kann besser kontrolliert werden und verl\u00e4uft viel schneller als die traditionelle Methode, die zwischen 2-50 Jahre andauern kann.<\/p>\n<p>Die frischen Teebl\u00e4tter werden geerntet und zun\u00e4chst zum nat\u00fcrlichen Welken ausgelegt, um so ihre Feuchtigkeit zu reduzieren. Anschlie\u00dfend werden die Teebl\u00e4tter leicht ged\u00e4mpft, denn das stoppt die Fermentation und h\u00e4lt das Blatt zun\u00e4chst gr\u00fcn \u2013 der \u201eMaocha\u201c ein Gr\u00fcner Tee entsteht. In diesem Zustand werden die Teebl\u00e4tter in eine Form gepresst. Damit beginnt die Lagerung und der jahrelange Reifeprozess des Pu Erh Tees. Mit der Zeit bilden sich an den Bruchstellen der Bl\u00e4tter kleine Mikroorganismen, die den Tee (\u00e4hnlich wie bei Wein) reifen lassen. Dieser Prozess kann mithilfe einer k\u00fcnstlichen Reifung wesentlich beschleunigt werden.
