Guter Geschmack spricht mehrere Sinne an: einerseits Geruch, viele verschiedene Geschmacksrichtungen und im besten Fall auch etwas Emotionales.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Was war dein au\u00dfergew\u00f6hnlichstes Geschmackserlebnis?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Schwierige Frage. Das \u00fcberraschendste war wohl Pferdeherz-Tatar in Japan.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Ist Japan f\u00fcr dich ein besonderer Ort?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Ja. Ich finde Japan total beeindruckend, unter anderem wegen der Pr\u00e4zision bei der Arbeit. Dieses akkurate Arbeiten versucht man auch immer irgendwie f\u00fcr sich zu entdecken und sich dahingehend weiterzuentwickeln.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Wie lange warst du in Japan?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Viel zu kurz. (lacht) Wir haben eine Rundreise quer durch Asien gemacht.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Wie schmeckt denn unser Matcha aus der Sicht eines Sternekochs?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Ich finde ihn super aromatisch. Du hast total w\u00fcrzige Noten und einen tragenden Geschmack, der sich noch weiter aufbaut. Das finde ich sehr spannend muss ich sagen, und es macht auch richtig spa\u00df, das zu trinken. Auch wie sich der Geschmack mit der Trinktemperatur ver\u00e4ndert. Am Anfang war der Matcha hei\u00df, da war die Dichte des Geschmacks eine andere und nicht ganz so langanhaltend. Jonas, du bist jetzt seit rund 10 Jahren in diesem Business &#8211; was hat dich dazu bewogen, Sterne-Koch zu werden?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Angefangen hat es schon in der Schulzeit mit Praktika und da habe ich schon gemerkt, dass mir das Kochen sehr gef\u00e4llt. Zus\u00e4tzlich habe ich in den Ferien Koch Kurse gemacht. Nach dem Abi habe ich die Zeit genutzt und weiter Erfahrung gesammelt, bis sich die Entscheidung gefestigt hat. Ich wollte genau das machen und nichts anderes. Also bin ich direkt eingestiegen und habe losgelegt.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> War dein Ziel schon immer, einen Stern zu erkochen?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Ich habe verschiedene Arten der Gastronomie kennengelernt und habe dann aber recht schnell gemerkt, dass das feine, akkurate Kochen mir sehr wichtig ist, auch in gr\u00f6\u00dferen Teams. Und da die Entscheidung auch klar, in die Richtung des &#8220;Fine Dinings&#8221; zu gehen. Der Michelin Stern war definitiv mein Ziel.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Wie war es f\u00fcr dich, dieses Ziel in so kurzer Zeit erreicht zu haben?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Es f\u00fchlt sich immer noch unwirklich an. Wenn man \u00fcberlegt &#8211; ich habe das Restaurant als K\u00fcchenchef vor einem Jahr \u00fcbernommen und bin unglaublich stolz, dass der Gro\u00dfteil meines Teams bei mir geblieben sind. Das ist ein absoluter Treue Beweis, der mich wirklich sehr stolz macht. Das war seit dem ersten Tag immer schon so, dass ich mit Freude hergekommen bin. Es gab noch keinen Tag, an dem ich keine Lust hatte. Wir haben eine super sch\u00f6ne offene K\u00fcche und den besten Ausblick Berlins, denke ich. Selbst wenn ich an einem freien Tag herkomme und B\u00fcroarbeit mache, sitze ich hier und habe den perfekten &#8220;Open Office&#8221; Platz.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Was zeichnet deine K\u00fcche aus?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Man erwartet immer, dass man sich auf einen K\u00fcchenstil festlegt. Aber ich w\u00fcrde unseren Stil eher als &#8220;Team&#8221; beschreiben. Ich habe ein sehr starkes Team und f\u00f6rdere bei allen ihre Kreativit\u00e4t. Alle bringen Eindr\u00fccke und Ideen mit, das sammeln wir. Wenn es dann zur Zusammenstellung des Men\u00fcs geht, lassen wir alle Ideen mit einflie\u00dfen und ich versuche das alles in eine harmonische Richtung zu bringen. Unser Restaurant ist unglaublich wandlungsf\u00e4hig und anpassungsf\u00e4hig.<\/p>\n<p><strong>Thomas Gr\u00f6mer:<\/strong> Wie kommt man von der Idee zum fertigen Gericht?<\/p>\n<p><strong>Jonas Z\u00f6rner:<\/strong> Das ist ganz unterschiedlich und h\u00e4ngt auch davon ab, wie viel Nebenprojekte gerade anstehen. Manchmal geht es aber auch schnell und man hat so eine klare Vorstellung vom Geschmack des Gerichts, dass es gleich steht. Andere Sachen brauchen 4-5 Versuche bis man das gew\u00fcnschte Ergebnis hat. In der Regel brauche wir aber 2-3 Monate um eine neue Karte zu entwerfen. Es muss ja alles in der Komposition miteinander funktionieren.<\/p>\n<p>Ich lege ganz viel Wert auf die Meinung meiner Mitarbeiter und lasse diese auch zu. Jeder darf sich weiterentwickeln &#8211; wenn jemand eine Idee hat, dann lasse ich sie Gerichte testen und ausprobieren.
