In Japan dreht sich alles um die Frische der Zutaten w\u00e4hrend es in China mehr um die Aromen geht. Josef Zotter bewundert an den beiden asiatischen K\u00fcchen, dass man dem Koch beim Zubereiten \u00fcber die Schulter schauen kann. Also direkt beim Kochen dabei ist.<\/p>\n<h4>Schokolade und Tee mit seinen Sinnen erleben<\/h4>\n<p>Auch bei der Zotter Schokoladen- Manufaktur kann bei jedem Schritt des Schokoladen- Produkts zugesehen werden. Laut Josef Zotter war genau das die \u00dcberlegung: ein Showprogramm, bei dem der Zuschauer sogar mitmachen kann. Hier wird gezeigt wie es wirklich hinter dem Produkt Schokolade aussieht. Denn Menschen sind sinnlich und m\u00f6chten Vertrauen aufbauen. Daher entschied sich Josef Zotter diese Sinne \u00fcber die Optik und die Kunst anzusprechen. Mit Erfolg!<\/p>\n<p>Doch nicht nur Schokolade sondern auch Matcha- Tee kann man \u00fcber seine 5 Sinne erfahren. Abgesehen davon, dass man den Tee nat\u00fcrlich schmeckt (umami) und riecht, kann man ihn auch sehen (strahlend gr\u00fcne Farbe), h\u00f6ren (das Matcha- Rohmaterial, Tencha, soll richtig sch\u00f6n knistern) und f\u00fchlen. Beim Streichtest ersp\u00fcrt man mit der Fingerkuppe die Feinheit des Matcha- Pulvers.<\/p>\n<h4>Die Vorteile von Matcha gegen\u00fcber Kaffee?<\/h4>\n<p>Bei Matcha steigt die Energie langsam hoch, er gibt eine ruhige aber langanhaltende Energie. Denn schlie\u00dflich haben die Zen- M\u00f6nche den Matcha zum Meditieren verwendet. Sie tranken einen starken Matcha- Tee um anschlie\u00dfend 6 Stunden lang zu meditieren.<\/p>\n<p>Ob sich die Wirkung vielleicht auch \u00fcber unser Trinkverhalten erkl\u00e4rt? Immerhin kippen die meisten Kaffee binnen Sekunden weg w\u00e4hrend man sich f\u00fcr Tee mehr Zeit nimmt. &#8220;Nein,&#8221; lautet da die klare Antwort des Teepapst. Matcha- Koffein wird durch die Polyphenole so lange gebunden, bis er durch den Magen durch ist. Erst im Darm wird das Koffein vom K\u00f6rper aufgenommen. Daher wirkt Matcha erst sp\u00e4ter aber 4-5 Stunden lang. Ganz im gegensatz zum Koffein. Kaffee steigert sofort den Puls und die Herzfrequenz, flaut jedoch genauso schnell wieder ab.<\/p>\n<p>Abgesehen davon ist Kaffee aufgrund seinem S\u00e4uregehalt schlecht f\u00fcr den Magen. Tee hingegen ist basisch und viel bek\u00f6mmlicher.<\/p>\n<h4>Zuckeralternativen bei Zotter<\/h4>\n<p>Auch bei Zucker gibt es einen gro\u00dfen Unterschied in der Wirkung. Der gew\u00f6hnliche wei\u00dfe Zucker erh\u00f6ht sofort den Zuckerspiegel und f\u00fchrt so zu einem kurzen aber starken Zucker- High. Bei Zotter wird viel mit ges\u00fcnderen Zuckeralternativen experimentiert, wei zum Beispiel Datteln. Bei Datteln findet der &#8220;Zucker- Peak&#8221; wesentlich sp\u00e4ter statt, au\u00dferdem wird dieser als angenehmer wahrgenommen. Aber f\u00fcr solche Zuckeralternativen fehlt oft die Technologie.<\/p>\n<p>Josef Zotter w\u00fcrde sich w\u00fcnschen dass die Menschen sich mehr mit ihrem Essen und Trinken besch\u00e4ftigen. Denn Lebensmittel sind nicht umsonst das &#8220;Mittel zum Leben&#8221;.
